Veggie Cheesy Egg Scramble with Asparagus
Scrambled eggs, anyone? Check out these cheesy veggie scrambled eggs.  Packed with flavor and perfect for those on a ketogenic diet.  You can also try adding other vegetables like bell peppers and spinach.

Prep time: 10 minutes Cook time: 10 minutes Yield: Serves 2 

INGREDIENTS
5 eggs
1 Tbsp Coconut Oil
1/2 Cup Grated Sharp Cheddar Cheese
1/2 Cup Asparagus, chopped
1/4 Cup Greek Yogurt
2 Glove Garlic, minced
1 Medium Jalapeno Pepper, chopped
1 Tbsp Capers, coarsely chopped (optional)
Salt and Pepper to taste
Extra cheese for topping

METHOD
1. In a small bowl beat eggs, yogurt, salt and pepper and then set aside.
2. Heat oil over medium heat.
3. Cook asparagus, jalapeno peppers, and garlic until for about 5 minutes.
4. Add eggs and stir occasionally. When eggs begin to set add cheese and capers; continue stirring until eggs as fully cooked. Remove from heat, top with cheese and serve warm.
