Smoky Tofu Spinach


Prep time: 5 minutes  . Cook time: 10 minutesYield: Serves 4

INGREDIENTS
14 Oz Firm tofu
30 Oz Spinach, raw
2 Cloves of Garlic, minced
1/4 Cup Reduced Sodium Soy Sauce
1 Tbsp Liquid Smoke
1/2 Tbsp Olive Oil
Salt, red pepper flakes and black pepper to taste

METHOD
1. Cut tofu into bite-sized cubes; marinate in mixture of liquid smoke and soy sauce for at least 2 hours.
2. In a large non-stick skillet, heat oil over medium heat. Add garlic and tofu. Cook for about 10 minutes until tofu is golden brown; stir occasionally.
3. Add spinach and cook until wilted. Season with salt, red pepper flakes and black pepper.
