Broiled Salmon & Mango Pineapple Salsa


Prep Time: 10 mins . Cook Time: 12 mins . Yield: 8 Servings


INGREDIENTS
2 Lbs Salmon

Marinade
2 Tbsp Honey
2 Tbsp Olive Oil
1 Tbsp Worchestire Sauce
Juice & Zest from 1/2 Lemon
Black Pepper, Salt & Red Pepper Flakes to taste

Salsa
1 Cup of Mango and Pineapple cut into small cubes
1 Jalapeno Pepper, chopped
1/2 Cup Red Onion, finely chopped
2-3 Sprigs Cilantro, chopped
Juice from 1-2 limes
Black Pepper, Salt & Red Pepper Flakes to taste

METHOD
1. Salsa: Combine salsa ingredients in a bowl; mix well. Set aside.

2. Preheat broiler with oven rack on highest level (usually ~6 inches from broiler)

3. In a bowl, whisk marinade ingredients together; taste and tweak to your liking.

4. Place salmon skin side down on a lightly greased baking sheet/foil. Pour marinade over salmon. Place under broiler for 8 – 12 minutes until desired doneness.

5. Garnish salmon with salsa.
