About This Buttermilk Chicken Recipe
I got the idea for this recipe when a coworker suggested that I marinate my chicken in buttermilk. Before this recipe, I had never had roasted buttermilk soaked chicken. Buttermilk, like yogurt, is a slightly acidic food which makes it great for tenderizing meats. The acid in buttermilk breaks down the protein fibers in chicken without toughening the meat in the way that stronger acids (e.g. lemon juice, vinegar, etc.) would. In terms of flavors, you will love the combination five-spice powder and garlic in this easy chicken dish.
I am really excited for you to try this recipe. I used Farmer Focus chicken drumsticks and thighs, but you can also try this recipe using the Farmer Focus whole young chickens or any of their other fresh bone-in or boneless products. INGREDIENTS
2.5 Lbs Farmer Focus Chicken Leg & Thighs
2 Cups Buttermilk
2 Tbsp Five Spice Powder
2 Tbsp Olive Oil
4 Cloves Garlic, minced
1/2 Tbsp Salt
1 Tsp Black Pepper
Red Pepper Flakes (optional)
2 Stalks Green Onions, chopped (optional)
METHOD
1. If desired, remove skin from chicken; discard skin. Combine chicken along with all the ingredients in a gallon freezer bag. Marinate chicken overnight or 24 hours.
2. Remove chicken from marinade; shake or wipe off some of the excess marinade.
3. Preheat oven to 400F.
4. Place chicken in a roasting pan lined with foil or parchment paper. Roast for about 45 minutes until juices run clear and the internal temperature is 165F. Remove from oven and garnish with red pepper flakes and green onions.
