Peanut Butter Banana Berry Oatmeal My Body My Kithcen

How do you make your oatmeal? This was my post-workout meal one morning: rolled oats, banana, peanut butter, chia seeds, coconut milk and strawberries. Really simple and yummy. Initially, my thought was to go the savory route like these savory coconut oats but the 5-year-old PB & J lover in me won this battle.


Prep Time: 5 minutes . Cook Time: 2- 5 minutes . Yield: 2 Servings


INGREDIENTS
1 Cup Old Fashioned Oats
1 1/2 Cup Water
1 Banana, sliced
1/2 Cup Strawberries, chopped
1/2 Tbsp Chia Seeds
1/2 Cup Coconut Milk
1 to 2 Tbsp Peanut Butter

METHOD
1. Cook oats according to package instructions. Stovetop: Bring water and milk to boil; add oats and cook for 5 minutes over medium heat. Microwave: Combine oats, milk and water in a large bowl; microwave on high for 2 to 3 minutes. 

2. Stir in peanut butter. Divide the cooked oatmeal into two bowls.  Top with banana slices, strawberries and chia seeds. Enjoy.
