Pomegranate Herb Vinaigrette


Let’s take control of our salad dressing situation with this pomegranate herb vinaigrette. A vinaigrette in its simplest form is a mixture of an acid and oil; other ingredients added to add flavor. This vinaigrette uses lemon juice and pomegranate (acidic ingredients ) and olive oil as its base. The fresh rosemary, thyme, garlic and mustard powder add more interest to the flavor. I think the star of this recipe is the pomegranate, like it was in my sweet potato and pomegranate salad.  Pomegranate packs a ton of micronutrients and phytonutrients like anthocyanins which provide that wonderful red color.

Prep Time: 5 minutes . Yield: Serves 16

INGREDIENTS
1 Cup Pomegranate Arils (seeds)
1/2 Cup Olive Oil
2 Cloves Garlic, minced
1 Tbsp Honey
1/2 Tbsp Fresh Rosemary, minced
2 Tsp Mustard Powder
1 Tsp Fresh Thyme leaves
1/2 Tsp Black Pepper
Cayenne Pepper to taste
Salt to taste
METHOD
1. Combine pomegranate, oil, honey, mustard powder, black pepper and cayenne pepper in a bowl or the cup of a stand blender. Blend using an immersion blender or stand blender until smooth. Stir in rosemary, thyme and garlic; add salt to taste.

2. Enjoy with your favorite salad.
