INGREDIENTS<\/strong>
\n1 Lbs Chicken Breast
\n2 Cups Corn Flakes (crushed) or Panko Bread crumbs
\n1\/2 Cup Fat-Free Greek Yogurt
\n1\/2 Cup All-Purpose Flour or Cornstarch
\n2 Egg Whites
\n1 Jalapeno, minced
\n1 Tbsp Garlic, minced
\n1\/2 Tbsp Dijon Mustard
\n1 Tsp
Smoked Paprika<\/a>
\n1 Tsp Brown Sugar (optional)
\n1 Tsp
Cayenne Pepper<\/a>
\n1\/4 Tsp
Ground Cumin<\/a>
\nSalt & Black Pepper to taste
\n<\/div>
METHOD<\/strong>
\n1. Preheat oven to 420F.
\n2. Cut chicken breast into small bite-sized pieces; about 1-inch cubes. Season chicken with the garlic, jalapeno, sugar, spices salt and pepper.
\n3. Season the bread crumbs or\u00a0corn flakes with salt, pepper and a dash of the other spices.
\n4. In a bowl, combine egg whites, yogurt and mustard; whisk until smooth. \u00a0Set aside flour\/cornstarch in another bowl.
\n5. Cover\u00a0chicken chunks with flour\/cornstarch, \u00a0then dip in yogurt mixture then cover with breadcrumbs or corn flakes. \u00a0Place chicken on baking sheet or rack. \u00a0Repeat until all chicken is done.
\n6. Bake for 15 minutes; let cool for about 10 minutes before serving.<\/p>\n
