Garlic Cumin String Beans

Here we have string beans and sautéed onions and garlic, tossed in one of our favorite spices, cumin!  We also added a drizzling of honey to pull all these great flavors together.  This dish is gluten-free, vegetarian and works well for meal prep.  Each serving contains 5 grams of protein!  Try this dish in place of the traditional green bean casserole during the holidays.  

Prep time: 15 minutes Cook time: 12 minutes |Yield: Serves 5

INGREDIENTS
1.25 Lbs String beans, washed & trimmed
1 Cup Red Onions, sliced
2 Tbsp Garlic, sliced
1 Tsp Olive Oil
1/2 Tsp Honey
1/2 Tsp Red Pepper Flakes
1/4 to 1/2 Tsp Cumin
Salt & Pepper to taste
Cold water to blanche string beans
METHOD
1. Wash and trim string beans; put pot of water to boil.
2. Add string beans to boiling water; water will stop bubbling momentarily.  Cook string beans for 3 minutes from the time when the water begins boiling again.
3. Remove string beans from boiling water and place them in ice-cold water or run cold water over them for a few minutes.  Set aside cooled string beans.
4.  In a skillet, heat oil over low heat.
5. Add garlic and cook for 3 minutes, stirring frequently.  Garlic burns easily, so keep an eye on the skillet.
6. Add onions to skillet and increase heat to medium; cook for 4-5 minutes until onions are clear.
7. Add pepper flakes, cumin and honey to the skillet. Cook vegetables for 1 minute while stirring frequently.
8. Remove skillet from heat, add string beans to skillet and toss in the sautéed vegetables.
9. Add salt and pepper to taste.
