
I’m super excited to add three more overnight oats recipes. The inspiration for these flavors were some of my favorite desserts: Strawberry Cheesecake, Spiced Carrot Cake and Chocolate Peanut Butter (Reese’s Peanut Butter Cup).

STRAWBERRY CHEESECAKE OVERNIGHT OATS

Prep Time: 5 mins . Inactive: Overnight . Yield: 2 Servings
INGREDIENTS
1 Cup Rolled Oats
2 Cups Milk (plant-based if desired)
2 Tbsp Chia Seeds
1 Tsp Cinnamon
1/2 Tsp Vanilla Extract
0 to 4 Tbsp of a sweetener of your choosing
1 Cup Strawberries, chopped
2 OZ Cream Cream cheese
Additional strawberries for topping
METHOD
1. To help the cream cheese blend smoothly, SLIGHTLY warm the milk and cream cheese in the microwave. 15-30 seconds should do the trick. Blend the warmed milk.
2. Evenly divide all the ingredients including the milk mixture into two sealable jars or containers. Mix well. Cover and refrigerate overnight.
3. Top with strawberries when ready to eat.

SPICED CARROT CAKE OVERNIGHT OATS

Prep Time: 5 mins . Inactive: Overnight . Yield: 2 Servings
INGREDIENTS
1 Cup Rolled Oats
2 Cups Milk (plant-based if desired)
2 Tbsp Chia Seeds
1 Tsp Cinnamon
1/2 Tsp Vanilla Extract
0 to 4 Tbsp of a sweetener of your choosing
1/2 Cup Grated Carrots
1/4 Tsp Nutmeg
2 Tbsp Walnuts, chopped
METHOD
1. Evenly divide all the ingredients (excluding the walnuts) into two sealable jars or containers. Mix well. Cover and refrigerate overnight.
2. Top with walnuts when ready to eat.

CHOCOLATE PEANUT BUTTER OVERNIGHT OATS

Prep Time: 5 mins . Inactive: Overnight . Yield: 2 Servings
INGREDIENTS
1 Cup Rolled Oats
2 Cups Milk (plant-based if desired)
2 Tbsp Chia Seeds
1 Tsp Cinnamon
1/2 Tsp Vanilla Extract
0 to 4 Tbsp of a sweetener of your choosing
1/4 Cup Peanut Butter
1/4 Cup Cocoa Powder
2 Tbsp Chopped Peanuts
Grated Chocolate (optional)
METHOD
1. Evenly divide all the ingredients (excluding the peanuts and grated chocolate) into two sealable jars or containers. Mix well. Cover and refrigerate overnight.
2. Top with peanuts and chocolate when ready to eat.
