Spiced Whipped Yams (Sweet Potatoes)

Spiced Whipped Yams
We love yams and these spiced whipped yams are simply awesome with a bit of a kick!  When thoroughly cooked, yams are sweet and can be easily whipped into a creamy texture without using much fat.  Try this recipe in place of your traditional candied yams dish.  This recipe is gluten-free, vegan friendly and works for meal prep.

Prep time: 15 minutes | Cook time: 75 minutes | Yield: Serves 5

INGREDIENTS
3 lbs Garnet or Jewel Yams
2 Tbsp Olive Oil
1/4 Cup Honey
1/2 Tsp Cinnamon
1/2 Tsp Cayenne Pepper
Dash of Nutmeg
Dash of Ground Allspice
Salt
Optional: Crushed Pecans
METHOD
1. Pre-heat oven to 400 F.
2. Wash yams and pierce with fork; place yams on baking sheet and bake for about 50-75 minutes until very tender. Remove yams from oven and let cool.
3. Scoop insides of yams into a large bowl; discard yam skins.
4. Add spices, oil and honey; using a fork, masher or hand mixer whip yams to desired smoothness.
5. Add salt to taste.
6. Top with crushed pecans.
