Roasted Carrots
Here’s a quick way to bring out the natural sweetness of your carrots.  These roasted carrots, sprinkled with a spices and drizzled with honey, are a great side in almost any meal.  This gluten-free, vegan recipe is ideal for meal prep.

Prep time: 15 minutes | Cook time: 45 minutes | Yield: Serves 7

INGREDIENTS
2 lbs Carrots
1 Tbsp Olive oil
1/2 Tsp Garlic powder
1/2 Tsp Cayenne pepper
1/2 Tsp Cinnamon
Salt & Pepper to taste
Optional: 1 Tbsp Honey
METHOD
1. Preheat oven to 350 F.
2. Wash and peel carrots; slice carrots diagonally into pieces of equal length.
3. Toss carrots in remaining ingredients.
4. Roast in baking dish for 30-45 minutes until desired tenderness, turning every 15-20 minutes.

Nutrition per serving (with honey): 81Cals; 15g Carb; 2g Fat; 1g Protein
