
Make this garlic cheddar broccoli rice and thank me later! Here’s another way to add some variety to your rice. The recipe assumes that you’ll be cooking a fresh pot of rice, but if you already have about 3 to 4 Cups of cooked rice on hand, you can skip to step where you sauté the veggies and then add the rice and cheddar.

I had this rice with some Baked BBQ chicken.

INGREDIENTS
1 1/2 Cups Brown Rice, uncooked
3 Cups Water/Broth
1 Tbsp Olive Oil
4 Cloves Garlic, minced
2-4 Stalks Green Onions, chopped
6 Oz Broccoli Florets
3/4 Cup Sharp Cheddar
Salt, Red Pepper Flakes & Black Pepper to taste
METHOD
1. In a saucepan, cook brown rice in water or broth according to instruction. Usually, this means bring the liquid to a boil, adding the rice and letting it simmer for 40-50 minutes. Set aside.
2. In a skillet, heat oil over medium-low heat. Add garlic and green onions. Cook for about 2 minutes until fragrant. Add broccoli florets and cook for an additional 2 to 3 minutes; stir occasionally.
3. To the skillet, add the cooked rice and cheddar, salt and pepper. Stir until well-combined and cheese melted.
4. Serve warm and enjoy.
