When it comes to broccoli, my go-to method of preparation is steaming it and drizzling a little olive oil. This week for meal prep I decided to do something different. I decided to roast my broccoli with garlic and pepper; I then added a sprinkling of freshly grated Parmesan cheese. Yum! Try this recipe and let me know what you think. I thoroughly enjoyed it with some spinach turkey meatballs and protein pasta.
Prep: 5 minutes . Cook Time: 20 minutes . Yield: Serves 6

1.5 Lbs Broccoli florets
1/4 Cup Grated Parmesan Cheese
1.5 Tbsp Olive Oil
4 Cloves Garlic, sliced
1/4 Tsp Red Pepper Flakes
Salt and Pepper to taste

METHOD
1. Preheat oven to 425 F. Line a baking sheet with parchment paper.
2. In a large bowl, combine broccoli, olive oil, garlic, red pepper flakes, salt and pepper. Toss until broccoli is evenly coated. Transfer to baking sheet.
3. Bake for about 20-25 minutes until broccoli edges are crisp.
4. Sprinkle cover with Parmesan cheese. Serve warm.
