
Sneak some extra green veggies into your meal with this rice recipe: lightly sauteeed green bell peppers, green onions and celery. Yes, please! This recipe is gluten free and vegan.

INGREDIENTS
2 Cups Water
1 Cup Brown Rice
1/2 Cup Green Bell Peppers, diced
1/2 Cup Green Onions, chopped
1/2 Cup Celery
1/4 Cup Parsley, chopped
1 Tbsp Olive oil
2 Tsp Garlic, finely chopped
1 Tsp Pepper Flakes
1 Tsp Honey
Salt & black pepper to taste
2 Cups Water

METHOD
1. Bring water to boil, then add rice. When water begins to boil again, reduce heat to a simmer and cover.
2. Cook covered for 40-50 minutes until rice is tender; stir once after about 20 mins.
3. While rice is cooking, heat oil in skillet over medium-high heat.
4. Reduce to medium heat and sautee celery for 4 minutes; stir frequently.
5. Add green pepper, garlic and pepper flakes; cook for 2 minutes.
6. Toss in green onions and parsley; cook for 1 minute.
7. Stir in cooked rice and honey; add salt and pepper to taste.
