Meal Prep: Baked Chicken, Vegetable Rice & Broccoli

We’re surprised it has taken so long for this meal suggestion to make it into the meal prep gallery: A variation of this vegetable rice with a teaspoon of grated fresh ginger, baked chicken & steamed broccoli.  This is a very satisfying and balanced meal, so go ahead and try it today!  This meal is gluten-free!
